Artichoke Dip

Smack in the middle of my diet I was invited to a "wine night". Of course I was going to go but I was undecided on what to bring. I was craving a good artichoke dip. I have made spinach and artichoke dip but I was looking for strictly an artichoke dip this time around. I found this recipe and was instantly sold. First of all, it is extremely easy and requires very few ingredients. Another reason I was so drawn to this recipe are the chiles. A little kick is always a good thing.

I served this with pita chips but you could also serve with tortilla chips. The reason I chose pita chips is because they are a little thicker and easier to dip. When you are baking this dip be sure not to overbake as the mayonaise could seperate and the dip could become quite greasy.

The dip was so yummy. I enjoyed it and I think everyone else did as well. The chiles added a different taste but didn't overpower the dip. I am always looking for new recipes, especially dip recipes, and I think this recipe will be around for a lot more wine nights!

Serves   : 
Prep   : 15 Minutes
Cook   : 
Preheat Oven   : 350 Degrees

1 cup    mayonaise
1 cup   grated parmesan cheese
1 - 14 oz can   artichokes, chopped and drained
1 - 4 oz can    diced chiles

Drain and chop artichoke hearts.
Mix artichokes and parmesan cheese together.
Add chiles and mayonaise.
Mix all ingredients together.
Spread mixture into a pan. Bake at 350 degrees for 25 minutes.

At this time it sounds like Drupal is the preferred blogging platform out there right now. (from what I've read) Is that what you're using on your blog?
