Banana Bars

Old bananas? No problem. Banana bars ( or cake ) is so simple. My mom always uses sour cream instead of Greek yogurt. To be honest, the only reason I used the yogurt is because we do not have sour cream. The banana bars came out perfect. The pan is large so be prepared to eat lots or share!

For the icing, I simply mixed powdered sugar with a little bit of water to form a light glaze on the cake. I then cut the bars in 2x2 squares.

Serves   : 
Prep   : 15 Minutes
Bake   : 20-25 Minutes
Preheat Oven   : 375 Degrees

1 1/2 cups   Sugar
1 cup   Greek yogurt, plain
1/2 cup   Butter, softened
2    Eggs
1 1/2 cups   Mashed bananas
2 tsp   Vanilla
2 cups   Flour
1 tsp   Baking soda
   Powdered sugar
1 tsp   Salt

Mix all ingredients together.
Pour into greased 15 1/2 x 10 1/2 x 1 pan.
Bake @ 375 for 20-25 minutes.
While cake is baking, mix 3 cups powdered sugar with 1/4 cup water for icing, slowly add more water to thin icing as needed for a glaze consistency.
