Banana Bread

Those bananas sitting on your kitchen counter that are turning brown...don't throw them away! Make banana bread. Banana bread is so simple to make...I promise. This morning I thought about making banana bread and within 15 minutes I had it together AND in the oven. Not bad!

I have only made banana bread one other time and it didn't go well. I am not sure what went wrong but it just wasn't sweet enough. Not that banana bread is super sweet but I am pretty sure I left out the sugar. This round was MUCH better. I typically am not a fan of breads but today this was a great treat. Even Ken liked it.

If you choose, you can add chopped walnuts or any other type of nuts. I didn't use any nuts because I didn't think Ken would like them but the banana bread is also yummy if you choose to add the nuts. Be sure to check your bread after a half hour. Today mine was done after 50 minutes.


Serves   : 
Prep   : 15 Minutes
Bake   : 60 Minutes
Preheat Oven   : 350 Degrees


Ingredients
1 3/4 cup    flour
2 tsp.    baking powder
1/4 tsp.    baking soda
1/2 tsp.    salt
1/3 cup    shortening
2/3 cup    sugar
2   eggs
2/3 cup    mashed bananas
1 cup    chopped nuts (optional)


Preparation
1.
Mash ripe bananas with a fork.

Cream together shortening, sugar, eggs and mashed bananas using hand mixer.
   
3.
Add flour, baking powder, baking soda and salt. Add nuts if you prefer.
   
4.
Pour into greased loaf pan. Bake at 350 degrees for one hour. Be sure to check after 30 minutes.
