Blueberry Muffins

If you are looking for the perfect Blueberry Muffin recipe - look no further, because you have found it. I am more of a chocolate kinda girl, but I recently decided to channel my inner desperate housewife and make blueberry muffins for our new neighbors. After a practice round, then another just because, and another...I have decided that I love blueberry muffins. This recipe makes 8 generous sized muffins that will rival any bakery. Trust me on this one.

I can't wait to make the muffins again (and again). The sweet crunchy topping on the top reminds me of blueberry muffins we ate when we were little - nothing fancy but the sugar on the top was always the best! The fresh blueberries in the muffins outshine store bought muffins any day. A little tart but sweet at the same time. You really can't go wrong with these. Simple enough to make with a baby hanging on my leg!

I also read that if you mix the blueberries with a touch of flour before you add them to the mixture they won't sink to the bottom. I didn't have too much trouble with them sinking the 2nd and 3rd time. The first time they did but they were still great!


Serves   : 8
Prep   : 15 Minutes
Bake   : 25 Minutes
Preheat Oven   : 400 Degrees


Ingredients
1 1/2 cups   Flour
3/4 cup   Sugar
1/2 tsp   Salt
2 tsp   Baking powder
1/3 cup   Vegetable Oil
1 cup   Fresh Blueberries
1/2 cup   Sugar
1/4 cup   Butter, room temp or softened in microwave
1 1/2 tsp   Ground cinnamon
1/3 cup   milk
1    Egg
1/3 cup   Flour


Preparation
1.
Line muffin cups with muffin liners.
2.
Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.
   
3.
Measure vegetable oil, add an egg and enough milk to reach the 1 cup mark.
 
4.
Mix the vegetable oil mixture with the flour mixture.
     
5.
Fold in blueberries.
   
6.
Fill muffin cups to the top.
 
7.
Prepare topping by mixing 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter and 1 1/2 teaspoons cinnamon. Mix with fork
   
8.
Sprinkle topping over muffins before baking.
 
9.
Bake for 25 minutes in preheated oven.

Hmm iis anyone else experiencing problems with the images on this blog loading? I'm trying to determine if its a problem on my endd or if it's the blog. Any responses would be greatly appreciated.

We go through the blueberries around here. I just added some frozen blueberries to some drop biscuits yesterday on a whim. They were okay, but these, these wonderful!
