Cheddar Broccoli Soup

I kinda love cheese. Well actually, I really love cheese. I will eat anything with cheese, except goat cheese. Yuk! I've always loved the rich, creamy, deliciousness of Panera Bread's Cheddar Broccoli soup. I also always knew Ken would never eat that. So, when I saw this recipe, I knew I found a winner.

First of all, this recipe packs in a lot of vegetables...very sneaky. I use more vegetables than the recipe called for. I also love that the soup is chicken broth based with just a little milk. For someone that loves cheese so much I definitely do not like milk.

Everything about this recipe screams comfort food. I love that I can use my food processor and chop the veggies very quickly and fine. I love that it comes together fast. I love that my family loves it as much as I do.

Side note- I just read you can add bacon...oh my goodness, I will do this next time.

Serves   : 3-4
Prep   : 20 minutes
Cook   : 20 Minutes
Preheat Oven   : 

2 Tbsp   Butter
1/2 cup   Onion
3 sticks   Celery
1 cup   Carrot
1 Tbsp   Garlic
4 cups   Chicken broth
2   Potatoes, large
1/2 cup   Warm water
2/3 cup   Milk
2 cups   Shredded Cheddar Cheese
2 cups   Chopped broccoli
1 Tbsp   Flour

Chop onion, celery and carrots.
Melt butter, sauté onion, celery and carrots until tender.
Add garlic and sauté an additional minute.
Chop potatoes and broccoli.
Add chicken broth and potatoes. Bring to a boil and simmer until potatoes are tender.
Add flour to water and mix together, then add to soup. Let soup thicken.
Add milk and broccoli and cook until broccoli is tender.
Mix in cheese until melted. Ready to serve.
