Cheesy Potatoes are a delicious side dish. It seems that my family has been making these cheesy potatoes forever but to a lot of people they are something new. I enjoy these potatoes because they are simple to make, especially once you have made them a few times. This recipe does make a large dish. However, you can always cut the recipe in half to make less.

I have quit using the chopped onion and substitute it with two tablespoons of onion powder. The reason for this substitution is because it is easier AND because there are some picky people that I know... my Dad can find an onion in anything no matter how small I chop it. In order to get around this problem, I switch out the real onion with the onion powder and everyone is happy.

Cheesy potatoes make a great side dish when you are looking for something different. Parties, picnic or your own dinner table. Cheesy potatoes taste great as leftovers too.

Serves   : 
Prep   : 15 Minutes
Bake   : 45 Minutes
Preheat Oven   : 350 Degrees

1 32 oz package    southern style hash brown potatoes
1/2 cup    melted butter
1 can    cream of chicken soup
12 oz    grated cheddar cheese
8 oz    sour cream
1 tsp.    salt
1/2    small onion, chopped
2 cups    crushed corn flakes

Combine all ingredients. If you choose to not use the chopped onion you can replace it with 2 Tbsp. of onion powder.
Mix all ingredients together in large mixing bowl.
Place mixed ingredients into 13x9 cooking dish.
Sprinkle with crushed corn flakes.
Bake at 350 degrees for 45 minutes until bubbly.

Cheesy Pototo Recipe. You can also use cream of mushrooms soup which is what I do.
