Chicken and Dumplings

So, I've always had a bit of confusion with chicken and dumplings and chicken and biscuits. Why? Who knows! What I do know is, my sister has always loved Cracker Barrel's chicken and dumplings. I convinced Ken to try them and he loved them too. Me....I've never tried them. No reason really, just wasn't my thing. Being the good wife that I am (haha), I decided to make Ken chicken and dumplings (or as Ava calls it, chicken and ducklings, which is gross to me)!

The chicken and dumplings turned out way better than I expected. I hoped it would turn out good and they would like it but they LOVED it! Always a bonus. And...I loved it too. I was pleasantly surprised. I've made chicken and dumplings now several times and I think each time it gets better. It is very filling and easy to throw together...even with two little helpers.

As a side note, I think Ava considers this a fancy meal. Every time we eat chicken and dumplings she insists we sit in the dining room.

Serves   : 4-6
Prep   : 20 Minutes
Cook   : 20 Minutes
Preheat Oven   : 

2 cups   Flour
1/2 tsp   Baking powder
1 pinch   Salt
2 Tbsp   Butter, softened
1 cup    Milk
2 quarts   Chicken broth
3 cups    Cooked chicken, shredded

Combine flour, baking powder and salt in mixing bowl.
Cut the butter into the dry ingredients. I used a fork.
Stir in the milk and mix until a dough ball forms.
Flour (and lots of it) on your working surface.
Roll out dough with a rolling pin. I make it pretty thin.
Cut dough into little squares, I used a butter knife.
Boil chicken broth and use a spatula to add dumplings and excess flour.
Cook for 15-20 minutes, until not doughy. I add ground pepper, you don't have to.
Add chicken and serve.
