Chicken Divan

I don't plan ahead. When I go to the grocery store I plan what I will make that week, but I don't plan each night ahead of time. I should. Usually around 4 p.m., I'm rushing around trying to defrost chicken, entertain A and A, and think about what I'm making for dinner. I'm gonna get better at this, I swear!

On this particular night, I decided on Chicken Divan. Not only because of the simplicity, but also because we really like it. I don't know about you, but if something is made with cheese, I'm 99% sure I'm going to like it. Chicken Divan has a lot of our family favorites: chicken, cheese and broccoli. I serve it with brown rice to complete the meal. If you choose, you could use turkey instead of chicken.

Prep   : 20 Minutes
Bake   : 25 Minutes
Preheat Oven   : 425 Degrees


Ingredients
3-4 cups   Broccoli, cooked
3   Boneless chicken breasts, cubed and cooked
1 can   Campbell's condensed broccoli cheese soup
1/3 cup   Milk
1/2 cup   Shredded cheddar cheese
2 Tbsp   Breadcrumbs
1 Tbsp   Butter, melted


Preparation
1.
Cut broccoli into small pieces and steam.
 
2.
Cube chicken and sauté until cooked. Use a little bit of olive oil and salt and pepper to season.
   
3.
Mix condensed soup with milk.
 
4.
Combine chicken and broccoli in 9in pie plate.
 
5.
Pour milk and soup mixture over chicken and broccoli.
 
6.
Cover with shredded cheese.
 
7.
Sprinkle bread crumbs on top and drizzle melted butter.
8.
Bake at 425 for 25 minutes, until bubbly.
