If you are looking for an easy recipe that looks and tastes like you invested A LOT of time, Chicken Rollatini is perfect. Chicken Rollatini is quick and easy to prepare. The blend of different tastes and textures in Chicken Rollatini will leave your family wanting more! This dish provides an appealing blend of chicken, salami, provolone cheese and asparagus. I call it the Italian version of Chicken Cordon Bleu.

The original recipe calls for Classico Tomato and Basil Pasta sauce. I decided to spice it up and use Classico Spicy Tomato and Basil sauce. If you want to make a quick but delicious meal, this is it! Once you prepare this Chicken Rollatini recipe you can sit back and relax while wonderful aroma of a home cooked meal fills your house.

Prep   : 20 Minutes
Cook   : 30 - 40 Minutes
Preheat Oven   : 350 Degrees

3-4    boneless, skinless chicken breast halves
10-12    slices of Genoa salami
10   provolone slices
12-18    asparagus spears (trimmed)
1   jar of Classico Tomato Basil Pasta sauce, divided
1/4 cup   shredded Parmesan or Romano cheese

Preheat oven to 350 degrees F.
Halve each chicken breast and pound to 1/4-inch thick. (I cover the chicken breast with cellophane and use a meat tenderizer.)
Season chicken breasts with salt, pepper, garlic powder, basil and parsley. (You can use any seasonings that you prefer, I used the above.)
Place 2 salami slices and 1-2 slices of cheese on top of chicken.
Add 3 asparagus to center of each breast; roll and secure with a toothpick.
Spread 1/2 cup of sauce on bottom of 13x9 baking dish. Put chicken in dish and top with 1/2 - 3/4 cup of remaining sauce. Sprinkle with shredded cheese.
Bake uncovered for 30-40 minutes, or until cooked through.
