Chicken Salad

Wow! This chicken salad is awesome. I love chicken salad...well, IF I know what's in it. First of all, I want all white meat. Secondly, I don't like anything too different. This chicken salad totally blew me away. It had a lot of ingredients that I typically wouldn't consider putting in a chicken salad. Greek yogurt, apples, cranberries, almonds, grapes...pretty healthy if you ask me! I didn't take a ton of prep pictures because there really isn't too much prep. Really, I promise. I boiled and chopped the chicken this morning then threw everything together before lunch. I was so nervous about using Greek yogurt. I actually looked through my pantry and fridge to find some mayo. I'm so glad I didn't have any because it was yummy with the Greek yogurt and way healthier. The only suggestion I have is if you are eating bread, why not go all out and have a croissant.

Cook   : 
Preheat Oven   : 

1 lb   Chicken breast, cooked and chopped
1/2 cup   Apple, chopped
1/2 cup   Cranberries
1/2 tsp   Garlic powder
2/3 cup   Grapes, chopped
1/2 cup    Red onion, chopped
1/2   Lemon, squeezed into bowl
1/2 tsp   Kosher salt
1/2 tsp   Black pepper
1/2 cup   Greek yogurt
   Ciabatta rolls
1/2 cup   Almonds

Boil and chop boneless chicken breasts.
Chop all of your other ingredients.
Mix everything together with Greek yogurt.
Season with salt and pepper.
Serve chilled on ciabatta roll.
