Chicken Tacos

I.LOVE. Mexican food. Typically, I am more of a go out and eat Mexican food kind of girl. You know, chips and salsa, enchiladas or tacos and of course a margarita. Lately, though (maybe with all my Pinterest pinning?!) I have decided to become more adventurous in the kitchen and start experimenting with new recipes and ideas.

Chicken tacos remind me of a favorite food that I order when we are out. I knew instantly I would love them. And I did. The chicken tacos were so easy to prepare. Depending on your taste preference, you can add more hot sauce or less or leave off the Ranch dressing or load it on. I decided to brown the soft taco shells in the oven (another pin!) and they turned out fabulously. At least I think so.

Chicken tacos are a refreshing change from my usual go to Mexican recipes, such as Mexican Lasagna (which we still love). I couldn't wait to share this recipe with you! It is such a great feeling to find a new recipe that is a big hit.

Serves   : 3-4
Prep   : 20 Minutes
Cook   : 10 Minutes
Preheat Oven   : 350 Degrees

1 lb   boneless, skinless chicken breasts cut into cubes
1/3 cup   flour
3 Tbsp   corn starch
1/8 tsp   cayenne pepper
1 tsp   garlic powder
1/3 cup   Frank's Original Hot Sauce
1 Tbsp   olive oil
   shredded lettuce
   green onions
   shredded cheese
   Ranch dressing
   Avocado slices
   tortilla shells

In a large bag, combine flour, corn starch, cayenne pepper, garlic powder with chicken breasts. Shake well to coat chicken.
Heat olive oil in a skillet on stove top. Add chicken and cook until browned on medium heat.
While chicken is cooking, prepare tortilla shells. Wrap tortillas in wet paper towel. Microwave for 30 seconds.
Spray tortilla shells with cooking spray on each side.
Carefully place tortilla shells over oven rack, as pictured. Take caution to not burn yourself.
Bake tortilla shells until golden brown, remove from oven and set aside.
Once chicken is finished, toss with hot sauce and serve in taco shells.
Add more hot sauce, ranch and toppings as desired.
