Chicken and Biscuits

Homestyle chicken and biscuits are exactly what you need when you are looking to make a quick yet tasty meal. This recipe was given to me by my Mother-in-Law. Like the chicken tetrazzini recipe, which was also given to me by her, chicken and biscuits is made with chopped or shredded chicken, cream of chicken soup and chicken broth. A lot of the same ingredients but two totally different meals. Boiling and chopping chicken is one of my least favorite things to do but the end result is worth it.

Chicken and biscuits seems like a comfort food to me. I enjoy it spooned over my biscuits. You could also dip your biscuits into the chicken and rice mixture. Ken chooses to butter his biscuits and spoon the chicken and rice mixture over the biscuits. However you choose to eat chicken and biscuits the end result is the same...Delicious!

I have never altered this recipe but when I have shared this recipe with friends in the past they added mixed vegetables to the chicken and rice mixture. It sounds great but I know my husband would be very disappointed in a change, especially since this is one of his favorites. If you decide to add veggies let me know how it turns out!


Serves   : 4
Prep   : 15 Minutes
Cook   : 30 Minutes
Preheat Oven   : 

Ingredients
1 lb.    boneless chicken breasts
1 can    cream of chicken soup
1/2 cup    cooked white rice
1 can    broth from cooked chicken
2 tbsp.    flour
1 can    frozen biscuits
to taste    salt and pepper


Preparation
1a.
Prepare biscuits according to package directions.
 
1b.
Boil chicken breasts until tender, saving broth.
 
2.
Chop chicken breasts.
 
3a.
Empty cream of chicken soup into pot. Add 1 can of saved chicken broth.
 
3b.
Add 2 Tbsp. flour to soup mixture to thicken. Continue to heat at medium temperature.
 
4.
Add chicken and cooked rice to soup. Continue to heat until hot. Spoon over hot biscuits.
