Chicken and Broccoli Aioli

Chicken and broccoli aioli is a great recipe. It is quick and even better it is inexpensive. Does it get any better? Actually it does because it is delicious too! My husband has claimed chicken and broccoli aioli as one of his favorite dinners.

If you are looking for a change from the typical pasta marinara, you are at the right place. Chicken and broccoli aioli keeps the ingredients simple but the taste impressive. My Grandma would make a similar version with spaghetti and broccoli. By adding the chicken in this recipe you have a complete meal.

On a side note I always use wheat pasta. My husband and I have been eating it for so long we hardly notice the difference.

Ingredients
3-4    boneless, skinless chicken breast halves
2 cups    broccoli florets
1/2 cup    olive oil
1-2 cloves    garlic
1 tsp.    salt
1/2 tsp.    garlic powder
1 lb.    penne


Preparation
1.
Cut broccoli florets into bite sized pieces. Mince garlic.

Cut chicken into bite sized pieces.

Boil water and cook penne pasta according to instructions on box. Add a 1/2 tsp. of olive oil to prevent the pasta from sticking and 1/2 tsp. of salt.

Steam broccoli, while you cook the chicken in a skillet. To cook the chicken, heat 2 tbsp. of olive oil and 1 clove of minced garlic on medium to high heat. Add the diced chicken. Season with salt and garlic powder. Lower to medium heat. Stirring occasionally chicken will become white on the outside. Cook until no longer pink.

Once pasta, chicken and broccoli are finished cooking mix together. Add 1/2 cup of olive oil, 1 tsp. salt, 1/2 tsp. garlic powder and another clove of minced garlic if you desire.

YES! Both sound fabulous! Especially grilled chicken. I can't wait to try it. I am going to try a new shrimp pasta recipe this week. I will be sure to let everyone know how it goes!

try adding frozen shrimp to this . sends it right over the top. also chicken grilled can be added.
