Chocolate Chip Zucchini Bread

Zucchini is a fruit? Yep, that's what Wikipedia says. All I know, is when gardens start producing zucchini there are lots and lots of zucchini to go around. I've had fried zucchini, zucchini tots, fried zucchini flowers, stuffed zucchini, any way I've had it, I love it. Chocolate chip zucchini bread was something I've had in the past at my friends house but never made, until today. Wow! Talk about a sneaky way to eat some healthy foods.

Chocolate chip zucchini bread requires simple ingredients, all of which I had on hand, including a fresh garden zucchini compliments of my father in law. Ava and I were able to quickly prepare the batter and enjoy the delicious smells of chocolate and cinnamon as our bread baked.

As soon as the chocolate chip zucchini bread cooled we were able to try a piece. It was perfect! Not too sweet, just the right amount of chocolate and cinnamon, and a healthy ingredient, zucchini. Next time you have tons of zucchini give this recipe a try.

Serves   : 10
Prep   : 10 Minutes
Bake   : 60 Minutes
Preheat Oven   : 350 Degrees

3/4 cup   Sugar
3 Tbsp   Vegetable oil
2   Eggs
1 cup   Applesauce
2 cups   Flour
2 Tbsp   Unsweetened cocoa
1 1/4 tsp   Baking soda
1 tsp   Ground cinnamon
1/4 tsp   Salt
1 1/2 cups    Zucchini, shredded
1/2 cup   Milk chocolate chips

Preheat oven to 350 degrees.
Mix sugar, vegetable oil, and eggs together until creamy.
Stir in applesauce until incorporated.
In a separate bowl, combine flour, cocoa, cinnamon, and salt. Whisk together.
Combine ingredients and mix together until blended.
Add zucchini and chocolate chips. Mix together.
Pour into a greased loaf pan, bake at 350 degrees for 60 minutes.
Let cool completely before removing from pan.
