Chocolate Chip Muffins

We had a Mother's Day brunch at our house on Saturday. I was just a little stressed about what to make. I'm usually a big planner but to be honest I didn't plan this menu too much! I definitely wanted to make muffins. We LOVE chocolate and with five kids running around I couldn't go wrong with chocolate chip muffins. I looked at a couple different recipes but this one stuck out. Simple ingredients and quick prep. That's all me!

I can assure you the chocolate chip muffins were a hit! Ken and Ana couldn't wait to try theirs. I have to admit these are pretty delicious. You won't be sorry. In fact, I wish I had one right now.

Serves   : 10-12
Prep   : 10 Minutes
Bake   : 18 Minutes
Preheat Oven   : 400 Degrees

1   Egg
2 cups   Flour
1 Tbsp   Baking powder
3/4 cup   Milk chocolate chips
1/2 cup   Sugar
1/3 cup   Vegetable oil
1/2 tsp   Salt
3/4 cup    Milk

In a large bowl combine flour, salt, baking powder, and sugar.
In small bowl combine egg, vegetable oil, and milk.
Combine the wet ingredients with the dry ingredients.
Gently mix in chocolate chips.
Fill lined muffin tins 3/4 full and bake for 18-20 minutes.
