Easter Bunny Cake

For a long, long time my Mom has been making an Easter bunny cake for Easter. It has become a tradition ... Sometimes she makes it like I did in this recipe ....sometimes she uses her bunny cake pan (cheater)! Regardless, we love it! As time went on, I started making it for my Dad. He has come to expect it - which makes me happy to do it!

This year, I had a very cute assistant...my nephew, Joey. I think maybe I started a new tradition. I hope so, because I love when he helps me. Who doesn't like to hear how pretty they are all day?! He's such a sweetheart and a real charmer.

For this recipe, you can use any cake mix flavor you prefer and really any icing too. I attempted to make my Grandma's icing recipe but I am definitely not a baker...plus my assistant got a little crazy on me!! We ended up pitching that and using good old canned frosting...Shhh don't tell anyone!

We had such a fun time making this cake and we hope you do too. As you can see from the pictures I had a hard time convincing him to save the cake for Pap!


Serves   : 10
Prep   : 20 Minutes
Bake   : 25 Minutes
Preheat Oven   : 325 Degrees


Ingredients
1   Cake mix, prepared in two 9" pans
1 can   Frosting - or make your own icing
1 bag   Coconut
3   Chocolate twizzlers
2    Mini Oreos
3   Pink jelly beans
2 drops   Pink food coloring
2 pieces   Trident white gum


Preparation
1.
Prepare cake mix as directed on box. Bake in two 9" baking pans, sprayed with Pam.
     
2.
While cake is baking, divide coconut. Place 3/4 cup coconut into bowl and add two drops of food coloring. Mix well. Coconut should be pink.
   
   
3.
Make frosting, if you choose.
 
4.
Let cake cool once finished baking.
5.
Cover a baking sheet with aluminum foil and turn upside down.
 
6.
Place one 9" cake onto bottom potion of baking sheet, this will be your bunny face.
 
7.
Cut remaining cake as pictured, this will be your bunny ears.
 
8.
Remove ears and place above the round cake. You will have extra cake. You can eat this!
9.
Frost cake. Sprinkle entire cake with coconut.
   
10.
Use pink coconut to decorate the bunny ears.
 
11.
Decorate the bunny face with Oreo eyes, jelly bean nose, chewing gum teeth and twizzler whiskers.
