Enchilada Casserole

I'm always trying to find new, healthy recipes. Sometimes, I think everything I make is full of calories. Quinoa is awesome. It's super healthy and tastes great. I've been trying to use quinoa a lot more but tend to run out of ideas. Today, I needed something quick and needed to have all ingredients on hand. I was working with a limited schedule. Baby A was napping and due to wake up any minute.

I found the Enchilada Casserole on Pinterest. I didn't have all the ingredients so I did modify it a lot. I replaced enchilada sauce with salsa and added green onions and rice. In the end, I was very happy with the outcome. Ken said it was great and very flavorful. I, on the other hand, didn't taste it. Day 1 of my Beachbody 3 day Refresh!

Serves   : 4
Prep   : 10 Minutes
Bake   : 20 Minutes
Preheat Oven   : 350 Degrees

1 cup   Quinoa, prepared
1 cup   Brown rice, prepared
1 can   Chopped green chiles
1/2 cup   Black beans, rinsed
1/2 cup   Shoepeg corn, drained
1/4 cup   Green onions, chopped
1/2 tsp   Chili powder
1/2 tsp   Salt
1/2 tsp   Black pepper
3/4 cup   Cheddar cheese, shredded
3/4 cup   Monterey Jack cheese, shredded
3/4 cup   Salsa
1/2 tsp    Cumin

Prepare rice and quinoa.
Mix rice, quinoa, spices, chiles, beans, onions and corn in large bowl.
Add 1/2 cup cheddar cheese and 1/2 cup Monterey Jack. Mix well.
Spread mixture into 9x13 dish that has been sprayed with non stick cooking spray.
Top with remaining cheese and bake for 20 minutes until bubbly.
