French Onion Soup

Nothing screams Fall like a great bowl of soup. This past week the weather began to change and I was so excited. Fall is my FAVORITE season. Crisp nights, falling leaves, Halloween, football games and of course all the fall foods.

I always order French Onion soup when we are out to dinner but I have never attempted to make it at home. Why mess with a good thing?? Then I received my copy of Kraft Food and Family in the mail last weekend and fell in love with so many of the featured recipes. The French Onion soup looked super easy to make so at the first sign of fall weather I took a chance.

I was so happy that I made it. We loved it...only problem now is Ken is going to want me to ALWAYS make it. I will change a few things the next time I make this soup. The recipe called for 1/4 tsp of thyme but I found that was a bit too much. In addition, if you are making this for a bunch of people you will definitely need to double or triple the recipe. It says it serves 5 but we had rather large bowls so ours only served 2!


Serves   : 2
Prep   : 10 Minutes
Cook   : 1 Hour
Preheat Oven   : 

Ingredients
3 slices    bacon
3 large    Spanish Onions
2 - 14.5 oz cans    beef broth
1/4 tsp    black pepper
1/8 tsp    thyme
2 slices    Italian bread, toasted
1 cup    shredded Italian blend cheese
2 tbsp    grated parmesan cheese


Preparation
1.
Slice onions and seperate.

Cook bacon, I cooked more than the required 3 slices, but only used 3 slices for the recipe. SAVE the bacon grease!

Add onions to bacon grease and mix well. Cover and cook on medium heat for 5 minutes. Uncover, and cook an additional 15 minutes, stirring frequently. Onions will start to become a golden brown and it will look like a lot less than what you started with.
     
     
4.
Add broth, pepper and thyme. Simmer for 15 minutes. Stir in crumbled bacon.
     
5.
Toast Italian bread while soup is simmering.
 
6.
Ladle soup into an ovenproof bowl, top with bread and cheeses. Broil for 3 minutes or until cheese melts and becomes golden brown.
