Kale and White Bean Soup

Kale is super popular right now. So is being healthy. Every once in a while I decide to make a recipe that is meatless. I find soups to be the perfect, easy, go to recipe when I'm looking for a quick meal that is yummy. My friend told me she was making a kale and white bean soup that her family loves. So I researched - Pinterest of course - and found an easy kale and white bean soup.

I wasn't sure how the soup would go over, but I made it anyway. It was pretty good. I liked it, but when I make it again I would omit the potatoes. They were good but sometimes, potatoes can overpower a dish...at least in my opinion. I definitely love the fact that the soup is healthy and very filling.



Serves   : 6-8
Prep   : 20 Minutes
Cook   : 45 Minutes
Preheat Oven   : 


Ingredients
1 tsp    Olive oil
3 stalks    Celery, chopped
1/2 cup   Carrots, chopped
1 medium    Onion, chopped
2 tsp   Minced garlic
4 cups   Water
4 cups   Vegetable broth
2-15 oz   cannellini beans, rinsed
1 bunch    Kale
3   Potatoes, chopped
   Salt and pepper


Preparation
1.
Heat olive oil in sauté pan.
2.
Add onions, celery, garlic and carrots, sauté for 5 minutes at medium heat. Remove form heat and set aside.
 
3.
Bring vegetable broth and water to a boil.
4.
Add cooked vegetables and potatoes, reduce heat and let simmer for 20-30 minutes, until potatoes are soft.
 
5.
Add the beans, kale and any salt and pepper you prefer. Stir until kale is wilted and serve immediately.
