Macaroni salad is a classic yet delicious picnic staple. I can't think of a picnic where macaroni salad has not been served. My husband really enjoys it so I got the recipe from my mother-in-law and started making macaroni salad for us. I make macaroni salad for picnics but I also will make it just for us to have at home.

I didn't always use the sweet relish. I didn't realize that was part of the recipe until one day when we were eating it at my mother-in-law's house and I noticed the relish. Whether you use it or not, the macaroni salad doesn't taste much different, but I decided to start using it since that is what her recipe calls for.

I am sure with all of the cold weather, and the summer picnic months seeming so far away, you may not be making macaroni salad any time soon. But, I guarantee when you do make it you won't be disappointed. Just remember to chill the macaroni salad for a few hours before you enjoy it.

Preheat Oven   : 

1 pound    cooked, elbow macaroni
4   hard-boiled, eggs
2 Tbsp.    sweet relish
1   green bell pepper
1   onion
2   celery stalks
1 1/2 tsp.    salt
1 cup    Miracle Whip
to taste    pepper

Cook elbow macaroni as directed on package. Gather ingredients.
Boil eggs, to do this, place eggs in a pot of water. Bring the water to a rapid boil. Turn off and leave the eggs in the hot water for 20 minutes. Cool, then peel the shell.
Chop the green bell pepper, onion and eggs.
Add the green bell pepper, onion, eggs, sweet relish, salt and pepper to the cooked elbow macaroni. Add the Miracle Whip, in small amounts while stirring to cover all of the ingredients. At this time you can choose to add more or less depending on your preference.
Mix all ingredients together and chill the macaroni salad before serving.
