Mexican lasagna is a recipe I found when I was looking for new recipes to make while following the 21 Day Beach Body fix. Let's just say, I still haven't completed the 21 Day Fix and I changed the original recipe a bit. First of all, I don't like ground turkey. I used a lean beef instead. Secondly, I added a little more cheese...shock!

It turned out good. I liked the idea of using red and orange peppers. Overall, I thought the lasagna would have more flavor. It was good but it wasn't my favorite recipe. I'm assuming the lack of flavor is because it is healthier. I will definitely try this again.

Serves   : 6-8
Prep   : 15 Minutes
Bake   : 30 Minutes
Preheat Oven   : 375 Degrees

1    Orange pepper, chopped
1   Red pepper, chopped
1 lb   Lean ground beef
1 packet   Taco seasoning
1/2 cup   Shredded cheese
1 can   Refried beans, fat free
1 small can   Diced chiles
1   Onion, chopped
2 tsp   Olive oil
12    Corn tortillas
3/4 cup   Water

Sauté onion, chopped peppers, chiles, and ground beef in olive oil.
Add taco seasoning and 3/4 cup water.
Spray 13x9 dish and place 6 corn tortillas.
Spread refried beans over tortillas.
Top with meat mixture.
Layer another 6 corn tortillas and meat mixture.
Top with shredded cheese and bake at 375, until cheese is melted and bubbly.
