Mini Cheddar Meatloaf

Easy and delicious. Those are the two things that I look for in a recipe. If a recipe calls for lots of ingredients that I don't have in my kitchen I immediately do not want to get into it.

My friend, Leah, thought of me and passed along this mini cheddar meatloaf recipe. Easy and delicious. What more could you ask for? The original recipe calls for quick cooking oats but since I didn't have those a quick substitution worked out well - bread crumbs.

Typically I like meatloaf but it isn't a dinner that I crave. Mini cheddar meatloaves changed that for me. The initial sweetness of the topping threw me off, but just for a bite or two.

Serves   : 3 - 4
Prep   : 10 Minutes
Bake   : 45 Minutes
Preheat Oven   : 350 Degrees

1   Egg
3/4 Cup   Milk
1 Cup   Shredded Cheddar Cheese
1/2 Cup   Bread Crumbs
2 Tbsp   Dried Onion Flakes
1 tsp   Salt
1 lb   Ground Beef
2/3 Cup   Ketchup
1/2 Cup   Brown Sugar
1 1/2 tsp   Mustard

In a medium bowl, mix one egg and milk.
Stir in shredded cheddar cheese, bread crumbs, onions, and salt.
Add ground beef and mix well.
Shape into 6-8 loaves.
Place into a greased 9x13 baking dish.
Whisk together ketchup, brown sugar and mustard.
Spoon over the loaves and bake for 45 minutes uncovered.
