Pasta Fagioli

I always wanted to make Pasta Fagioli. I tried a recipe in the past and I can't remember what was in it but I know that I didn't like it very much. What I love is Olive Garden's pasta fagioli. I wish I had that recipe! YUM.

This pasta fagioli recipe is good and we definitely enjoyed it. I wasn't sure if I loved the sausage in it. I will say that I thought it was better the second night..and that is odd because there are very few things that I like leftover.

Ken and my Mom agreed that the pasta fagioli was very good. I liked it as well but I thought the sausage flavor took away from the other flavors in this recipe. I would try it again but I would probably use a half pound of sausage and a half pound of ground beef.

The recipe called for Italian seasoning. I wasn't sure what that was so I used the powder from the Good Season's Italian dressing. Tasted fine!

Serves   : 3-4
Prep   : 20 Minutes
Cook   : 40 Minutes
Preheat Oven   : 

1 Tbsp   olive oil
1   onion, finely chopped
1 tsp   minced garlic
1   carrot, peeled and chopped
1 can   tomato sauce
1 can   diced tomatoes
3 cups   chicken broth
1Tbsp   Italian seasoning
2 tsp   red pepper flakes
1 can   cannellini beans, rinsed
1 cup   ditalini pasta, cooked
to taste   Italian cheeses
1 lb   bulk hot sausage

Chop onions and carrots. (I used a food processor)
Prepare ditalini pasta, as directed on box.
Heat oil in large stock pot, with garlic, onions and carrots.
Add sausage and cook until no longer pink, drain excess oil.
Add Italian seasoning, red pepper flakes.
Stir in tomatoes, tomato sauce and chicken broth.
Bring to a boil, then reduce heat and simmer for 30 minutes, covered.
Stir in the beans and ditalini at this point. Simmer for 6-8 minutes.
Serve topped with cheese.
