S'mores Cookies

I don't think I've ever turned down a s'more...ever! With summer here and lots of fun summer activities I've been thinking about s'mores. We don't have a fire pit (yet) so I decided to find a simple recipe for s'mores. You can't go wrong when you make this, I promise! The ingredients are simple and the preparation is quick. These aren't as messy as the real deal but that's fine by me.

I love the idea of being able to make these inside with the kids; especially considering their ages. This was a great snack to make with my 3 year old. She loves s'mores too!


Serves   : 
Prep   : 15 Minutes
Bake   : 15-18 Minutes
Preheat Oven   : 375 Degrees


Ingredients
11 Tbsp   Unsalted Butter, softened
1 cup   Brown sugar, packed
1/2 cup   White sugar
2    Eggs
1 tsp   Vanilla
1 tsp   Baking soda
1/2 tsp   Sea salt
2 1/2 cups   Flour
1/2 cup   Milk chocolate chips
1 cup   Mini marshmallows
   Hershey bars
   Graham crackers
1/2 tsp   Cinnamon


Preparation
1.
Mix together flour, baking soda, sea salt, and cinnamon. Set aside.
 
2.
In another bowl, cream together butter and sugars. Add eggs and vanilla.
   
3.
Add the flour mixture to the butter mixture and mix together.
   
4.
Add the chocolate chips and marshmallows.
   
5.
Chill for at least an hour.
6.
Preheat oven to 375 and line a large baking sheet with parchment paper.
7.
Lay graham crackers down on parchment and add a teaspoon of cookie dough to each graham cracker. Push down slightly.
 
8.
Bake for 7 minutes then remove from oven and push Hershey bar pieces into cookie.
     
9.
Continue to bake for another 7-10 minutes, until golden brown. Cool completely before cutting into squares.
