Stuffed Pepper Casserole

Stuffed peppers are so delicious but sometimes I just don't feel like investing the time that it takes to make them. Stuffed pepper casserole is easy and just as tasty as stuffed peppers but in half the time. After working all day I definitely want a recipe that is easy and fast.

The garlic provides a bit of flavor that typical stuffed peppers do not have. One of my favorite things about stuffed pepper casserole is the peppers cook while you are browning the ground beef and continue to cook while you are baking the casserole. By the time you are ready to enjoy it, the peppers are well cooked and not crunchy which sometimes happens if you don't cook stuffed peppers long enough.

Stuffed pepper casserole can be made in advance, all you would need to do is pop it into the oven when you are ready.

Serves   : 7
Prep   : 15 Minutes
Bake   : 25 Minutes
Preheat Oven   : 350 Degrees

1 pound    ground beef
3   medium sized green peppers, chopped
3 cloves    minced garlic
1 1/2 teaspoons    salt
2 cups    cooked white rice
1 - 26 oz jar    spaghetti sauce
1 1/2 cups    shredded Italian blend cheese, divided

Coarsly chop green peppers.
Brown ground beef with salt, garlic and peppers. Drain.
Stir in rice, spaghetti sauce and 3/4 cup of cheese.
Spoon into casserole dish, top with remaining cheese and bake at 350 degrees for 25 minutes.
