Stuffed Cubanelle peppers is a recipe I made on a whim. I kinda sorta remember my Grandma making something like this but I wasn't sure. What I decided to do was make my Gram's meatball recipe, which is guaranteed to be good, and stuff some peppers. My Gram uses hot peppers, but I decided to try Cubanelle. Result...very flavorful...easy and great for leftovers!!!

Are you convinced yet?! The thing I always have a hard time with is what to serve these with. I guess you could serve them with whatever you want but we had pepperoni rolls. NO I am not just plugging Kneady Kitchen....well maybe a little. I am just excited to have two recipes that I can link to. Oh and the most awesome Grandma ever!! Keep your eyes peeled for a tribute to Lil!
