Stuffed Cubanelle peppers is a recipe I made on a whim. I kinda sorta remember my Grandma making something like this but I wasn't sure. What I decided to do was make my Gram's meatball recipe, which is guaranteed to be good, and stuff some peppers. My Gram uses hot peppers, but I decided to try Cubanelle. Result...very flavorful...easy and great for leftovers!!!

Are you convinced yet?! The thing I always have a hard time with is what to serve these with. I guess you could serve them with whatever you want but we had pepperoni rolls. NO I am not just plugging Kneady Kitchen....well maybe a little. I am just excited to have two recipes that I can link to. Oh and the most awesome Grandma ever!! Serves   : 4
Prep   : 15 Minutes
Cook   : 45 Minutes
Preheat Oven   : 350 Degrees

6   Cubanelle peppers
1/2 cup   Water

Make meatballs as directed.
Cut the top off of the peppers and remove seeds.
Cut peppers in half.
Stuff with meat, as prepared.
Place peppers in 9x13 baking dish.
Pour 1/2 cup of water into dish.
Cover with aluminum foil and bake for 45 minutes.
