Very Good Very Good Chicken is very good, obviously. My friend gave me a copy of this recipe, which is actually called Baked Mushroom Chicken. Ken and I started calling it Very Good, Very Good Chicken because the copy Addie gave me had "very good!" written on it, not once, but twice!!!

Very Good Very Good Chicken tastes kinda like Chicken Marsala which I've wanted to make but the recipe I had requires too many ingredients that I didn't have. This recipe is SO simple. Really, I can make this and have it in the oven within 15 minutes. I like to serve it with brown rice but feel free to experiment.



Serves   : 4
Prep   : 15 Minutes
Bake   : 30 Minutes
Preheat Oven   : 350 Degrees


Ingredients
3-4   Boneless chicken breasts, thin sliced
6 Tbsp   Butter
1/4 cup   Flour
3/4 cup   Chicken broth
1 cup   Mushrooms
1/2 cup   Italian blend cheese


Preparation
1.
Thin slice chicken breasts, tenderize if necessary.
 
2.
Place flour in a bag and toss chicken to coat with flour.
3.
Melt 3 Tbsp butter in frying pan, add chicken and brown on both sides.
   
4.
Place chicken in 13x9 pan sprayed with non stick cooking spray.
 
5.
Melt remaining 3 Tbsp butter, add mushrooms and brown.
 
6.
Add chicken broth and bring to a boil. Simmer for 5 minutes then pour over chicken.
 
7.
Bake for 25 minutes, remove from oven, sprinkle with cheese and bake for an additional 5 minutes.
