Zucchini Fries

I'm on a zucchini kick, can't you tell? Next year, I am definitely planting zucchini in our City Picker (deck garden). I absolutely LOVE zucchini. Typically, fried zucchini but as I've gotten older, I've branched out. Thankfully, I've loved all the zucchini recipes I've tried. Earlier this week, I had a craving for french fries. I remembered seeing recipes for zucchini fries and decided that I needed to try this.

Zucchini fries are awesome. Simple to make, crispy and flavorful. Ava and I ate them all. Every. Last. One. Ava is the cutest little thing. Loves almost all vegetables. That makes me SO happy. Enjoy!


Serves   : 3-4
Prep   : 10 Minutes
Bake   : 12 Minutes
Preheat Oven   : 400 Degrees


Ingredients
2    Medium Zucchini
1 cup   Italian seasoned bread crumbs
1 cup   Panko bread crumbs
1 tsp   Garlic powder
1/2 cup   Grated Parmesan cheese
   Salt
   Pepper
1   Egg
   Non-stick cooking spray
1   Egg


Preparation
1.
Mix dry ingredients together.
 
2.
Beat egg in a separate bowl.
 
3.
Cut zucchini into strips.
 
4.
Dip zucchini in egg, then roll in bread crumb mixture.
   
5.
Place on cookie sheet, covered with aluminum foil and sprayed well with non stick cooking spray.
 
6.
Bake at 400 degrees for 10-12 minutes.
